From Sadie’s 9-stool hamburger stand to a New Mexico favorite

Sadie arrived at 5:30 AM each morning, with customers already parked outside waiting for her to open. Her humble hamburger stand in the early '50s had just 9 stools, but that never stopped folks from piling in. She greeted each patron with her signature “Hi, honey!” and somehow remembered exactly how they liked their meals. Sadie Koury was a role model of classic New Mexican friendliness and hospitality, serving up comforting meals that made everyone feel right at home.
Her passion for food and service was rooted in fresh ingredients, timeless family recipes, and a warm welcome for everyone who walked through her door. Customers loved her as much as she loved them. At Sadie’s of New Mexico, we honor her legacy every day by upholding those same values and making this family-owned restaurant the very best it can be. If Sadie could see us now, we’re sure she’d be proud.
That little 9-seat stand has grown into a bustling local favorite with over 120 seats, welcoming both loyal locals and guests from all around the world who come to taste authentic New Mexican food and experience Southwestern hospitality.
From our house specialty enchiladas to our legendary stuffed sopaipillas, Sadie’s of New Mexico has been feeding the community for generations with comforting dishes packed with bold heat and flavor. And after more than 70 years, we’re still going strong!

When Sadie retired in 1975, her younger sister Betty-Jo and brother-in-law Bob Stafford stepped in to carry on what she started. But it didn’t stop with them. From day one, Sadie’s has been a place where relatives, family friends, and folks from all walks of life were welcome to be part of our story.
Over the years, generations of familiar faces have worked the kitchen, greeted guests at the door, and served up numerous delicious meals. Kids who once bussed tables now bring in their own families to enjoy a classic New Mexican meal. It’s always been about more than business—it’s about community.
