If there’s one common denominator in New Mexican food, its spice. From rich red chile sauce on mashed potatoes to the earthy burn of green chile on a cheeseburger, a little kick in unconventional places reminds you you’re home. We’ve even made it into part of our official identity with our state question: Red or Green? If you’re a spice-lover, New Mexico might be paradise. It’s a vacation destination with beautiful sunsets, family-friendly fun, and food that never has you asking your server for hot sauce.

At Sadie’s of New Mexico, we take New Mexican sensations seriously. We’ve been serving green chile cheeseburgers since we opened in the early ‘50s, and spent the last 70 years making sure our classic dishes reflect the New Mexican attitude– friendly, comforting, and with a little kick that leaves you wanting more.

So whether you’re a spice-lover looking to turn up the heat during your next visit to Sadie’s, or someone who enjoys the mild side, we’ve got you covered. Keep reading for Sadie’s spiciest dishes, and how you can upgrade if you want to feel the burn.

Sadie’s Hot Salsa: A Classic With a Kick

As you walk past tables at Sadie’s, it’s hard to miss the baskets of fresh tostada chips and bowls of Sadie’s hot salsa getting passed around– everybody excited for the next bite of heat-tinged flavor. It’s at the table as soon as you sit down, warming up your taste buds as you look over the menu. Made fresh every morning with ripe tomatoes, fine-chopped jalapenos, and just the right amount of garlic, Sadie’s Classic Hot Salsa is the perfect start to any meal.

If you start to miss the heat, and can’t stop by, no problem– Sadie’s salsa is waiting for you at your local grocery store. Our salsa is perfect for adding heat to tacos, eggs, burritos, or as a marinade for meats.

Whether you’re at home or visiting Sadie’s, starting with something subtle lets the heat build, so every bite hits just a little bit harder.

Green Chile Stew: Hot and Hearty

This New Mexican staple doesn’t pretend to be fancy. Our Green Chile stew is simmered low and slow with pork, corn, potatoes, onions, and of course, plenty of green chile. The broth takes on the richness from the pork and the sharp, earthy spice from the chile. Every bite is hearty, comforting, spicy goodness that reminds you of New Mexico no matter where you are.

Another made-fresh-daily-dish, our green chile stew makes the perfect side to your meal or entree (especially if you order a few sopaipillas). For those looking for home-cooked comfort with a kick, green chile stew is a go-to.

Chile Relleno: Smothered and Stuffed

A roasted green chile, stuffed with asadero cheese, beer-battered with a local IPA, and served two ways. After the first crispy bite of the breading, the whole green chile gives plenty of sharp, earthy heat, finished off by the smooth, asadero. But don’t worry it only gets hotter from here.

Our Chile Relleno Burrito comes with a whole relleno, stuffed with plenty of Billy’s Spicy beef, topped with refried beans, before being rolled into a soft, fluffy, flour tortilla and smothered in your choice of Sadie’s chile. And don’t forget the papitas on the side to catch all that extra chile.

If you’re looking for more, try one of our famous Sadie’s dinners. One, two, or three rellenos stuffed with cheese, and served over papitas and frijoles. Smothered with your choice of chile, topped with melted cheddar cheese for extra richness, and garnished with lettuce and tomatoes for something fresh.

As if the decision wasn’t hard enough, you still have to pick, whether your order is smothered or on the side: Red, green, or Christmas?

Enchiladas: Stacked, Rolled and Saucy

Sadie’s enchiladas are endlessly customizable to match your favorite flavors, textures, and spice levels. We know that everybody has their signature enchilada order, whether you’re loyal to  shredded chicken rolled with green sauce and topped with cheese, or prefer red sauce between layers of stacked tortillas with beef. Whatever your order is, it’s easy to turn up the heat at Sadie’s, and find a new go-to order in the process.

An easy way to add extra kick to your enchilada order is with the meat. Try Billy’s Spicy beef for a little extra deep, meaty, spicy kick. This Sadie’s classic brings the perfect amount of heat with comforting, familiar flavor to any enchilada. Or, if you want to turn it up a notch, try our carne adovada. Marinated in red chile, then baked low and slow, the carne adovada soaks in the richness of the red chile and the warmth of the spices to develop a rich, deep flavor that keeps you coming back for more, even as the heat starts to make you sweat.

When it comes to chile sauce, you really can’t go wrong. Red brings that comforting richness that has you thinking of home– combined with spicy beef, cheese, or carne adovada, you’ve got heat that doesn’t stop at the surface, with new layers of flavor waiting to be found in every bite. Green chile sauce, with its sharp, earthy profile, pairs well with chicken and packs a punch with every bite. If you can’t decide, and want the best of both worlds, you can always order Christmas for one of each.

If you’re a sauce lover looking for more chile-packed goodness in your enchiladas, go with stacked. Tortillas are layered with chile sauce, cheese, and meaty filling to let everything mingle and melt together. If you’re looking for something a little neater and more filling-focused, order your enchiladas rolled. A tortilla wrapped around your choice of filling, then smothered in sauce, topped with cheese, and baked until warm and bubbly, a rolled enchilada is the perfect way to make sure each element has its chance to shine, then come together for some depth.

Enchiladas are the ultimate choose-your-own adventure. If you can’t decide, don’t worry– you can get stacked and rolled, Red and Green (just order Christmas!), beef and chicken, all on one plate at Sadie’s.

Brian’s Spicy Carne Adovada Ribs:

This one’s for our Red Chile lovers. Low and slow is Sadie’s secret to building lasting, flavorful heat in our spiciest dishes. Like our classic carne adovada, Brian’s carne adovada ribs are marinated in Sadie’s red chile, then baked until they’re fall-off-the-bone tender.

Served in a small portion on the a la carte platter, or full-size when you order one of our signature dinners with papitas and frijoles, Brian’s Spicy Carne Adovada Ribs come topped with melted cheese and onions. Messy, rich, and of course, filled with spicy flavor you can’t forget.
